If there are people who legitimately want to sell their items on eBay or Kijiji I have no issue with them, but some of the prices Iโve seen for the animal crossing switch are just plain evil, let alone what sellers are asking for the red/blue or grey switches.

Not saying that Nintendo is a poor platform. But Christmas is about hype. From what I can see, they just don't have much momentum going into this Christmas season compared to the competition.
What are they going to do, make the Animal Crossing Edition Switch available to the masses, except this time include a game ? The game itself isn't for everybody (I personally despise it). There's a reason why many people are reselling it online.

Christmas is an excuse to buy gifts people normally wouldn't buy on a regular day.
$400 for a 3 year old system... they never dropped the price from release it seems.
There were quite a few that had switches in stock.
- new xbox and ps5, hard to compete when an xbox series s is cheaper than a several year old console
- switch pro supposedly coming next year
- no must have titles, I assume botw2 will line up with switch pro release
- likely anyone who wanted a switch bought one by now

The Animal Crossing edition will sell for $450 at least. There are those selling for cheaper than that right now, because every store has them available and so many resellers right now. Give it a few months, look at the NES and SNES classic, still selling on resale for over the original price, used, because stores no longer sell them.
It all depends if you want a colored one that might becole limited again or not
