      If you get extended warranty through your credit card, its invalid if you use gift cards for a portion of the purchase. Keep the gift card for some accessories is my suggestion

      I genuinely doubt it. The issue is that the GC is discounted into the purchase price (so the GC number is attached to that receipt). See bolded below. To get a refund, you'd have to give back the original GC.

      Here's my post from yesterday if you're looking to save some more money. Buy GC with 5% bonus at HillCrest Mall (was 10% yesterday)-> pay for Macbook. Use $210 given by Apple to buy Applecare through the education store.

      The good thing is last year, the addition of the gift card saved you some taxes i.e. $600 iPad purchase was $530 + $70 gift card but you are only taxed on the $530.
      Assuming we get the same $210 GC as Apple Australia:

      Base 13" model w/ TB is $2400 => $2190 + $210 GC + taxes on $2190 = $2475 = Oxford GCs purchases totaling $2,250 + 10% bonus given as a GC

      So you end up paying $2,250 for the laptop with a $210 GC to spend (probably gonna need Applecare considering the sheer number of keyboard issues). Education store has Applecare for $251. This is a pretty good deal if it works out.

      EDIT: If it's just a prepaid Amex accepted everywhere (well, wherever Amex is accepted), this is just 10% off everything in life lol.

      It looks like they charge you in full for both the item and gift card at time of purchase so both appear on receipt. Then at the bottom it says "savings $100" or whatever the gift card value is. I assume that is eventually refunded to the credit card once the 15 day refund period is passed?

      So it's impossible to return the item and not return the gift at same time, as both are itemized in the receipt.

      You'll probably have to buy AppleCare in a subsequent transaction to apply the gift card. It's just an Apple store gift card so it works on anything in the store.
