2) never used the slow cooker. But as a new cook, I can never go back to stove top pot usage anymore. Now I can just press a button and leave the kitchen. the safety is actually a huge value add for me.

For what it's worth, in my opinion, the results are fine. But I'm no foodie.
I implied it's the wrong tool for the job.
It's passable if you just need a cooked protein without regard to taste or texture.
I guess there's not much saving compared to amazon+ebates rebate, but I was anyway close to a Best Buy when I was browsing and saw this deal at RFD.
I cook most of my protein in sous vide
If you're wanting to seriously get into sous vide it's better to invest in a proper circulator. Also, instant pot themselves do not recommend using the ultra for sous vide. They do have a new model with a sous vide function but it's quite expensive. Again, better to get a separate circulator and container for sous vide.

It's always possible to cook less food in a big one but it's not possible to cook more food in a smaller one.
4 is good for one person with leftovers.
6 is good for 2-3 people with leftovers.
8 is good for 4+ people, with or without leftovers.
It will help you A LOT. You can easily find many instant pot keto recipes. Intant pot makes it so much easier to make good stuff.
-Chilli
-Butter chicken
-One pot pasta
-Soft/hard boiled eggs (takes 2 minutes)
-Steaming vegetables
-Ribs or wings (broil in oven afterwards)
-Bone broth
Personally I havent found making anything in the instant pot to be overwhelmingly WOW - BUT I do find it saves me quite a bit of time when making things. Anything I used to slow cook over night, I can do now within 30 minutes. I also find making everything in the single pot a lot less clean up, though needs a bit more planning.
I also find once I get everything into the pot, I can just walk off and do other things and come back and its all done.
It does take some getting used to, as when I used to cook I could visually see whats going on and adjust accordingly. Once everything is in the instant pot, I wont know how it turns out or if it needs adjusting till after its done. I have had times when I steamed veggies, and it came out mushier then I would have hoped. But its a learning process that I find is worth the time
None of the above items are "required", but make for a better pressure cooker.
The problem is that 99.9% of all recipes nowadays are written by idiots.
Pressure cooking is 100% the wrong tool for chicken breasts or any lean and/or tender protein really.
Basmati may require some modifications.
I should mention that I use another container inside my pressure cooker like a bowl or in my case for larger volumes of rice a 3qt Instant Pot bowl. It fits my 6qt stove top pressure cooker just fine.
I'd test with a small volume of Basmati just to see what changes you have to make. I'd probably up the water to 3:2.
Just an instant pot recipe chosen at random, as was the beef one.
I don't have pressure cooker family recipes passed down from generation to generation, so it was to the internet to give it a spin.
I usually do basmati rice in a steamer, but will have to try this out.
One thing I seem to have been doing wrong on the other recipes was not doing the natural release of the pressure. Live and learn.
High pressure for 5 minutes then let it depressurize by time (aka don't dump it).
Rice turns out perfectly for my needs. It's a little "hard" (not actually hard, but might be under for some) but comes out perfectly when smothered with stuff.
Up the water a touch if you want softer clumpier rice.
The word roast is on so many things that aren't suited to either slow/pressure cooking or high heat roasting.
You basically have to know which cuts are which on an animal in order to cook it right. You can't rely on words on a package.
Short ribs aren't bad in a pressure cooker, depending on how you want your meat.
If it's fall apart tender, you want chuck/shoulder/short rib.
Avoid anything that says round. Oh and anything that's solid red (aka lean)
Avoid expensive roast cuts too. Those are better for roast beef.
