Hi I have recently boiled crabs. There's tons of green goo and orange harder stuff. I'm thinking its the brains and fat.. How many of yous eat this? How bad is it for you (cholesterol)?

Crab fat is the best part, but high in cholesterol. My wife hates it when she opens up a crab and there's no fat.

If its not eggs than what is it? I believe it IS crab roe...aka...crab eggs.

Yea, I was looking for the correct procedure to clean, and cook blue crabs. They look so good.

The eggs are under the female's belly. They don't harvest crabs when they have eggs as far as I know.

isnt much to do really , scrub the tops of them , boil them , just start gathering the flesh out of it and if your vietnamese or chinese pour some salt in a plate and pepper and squeeze lime juice over the salt and pepper and dip and eat :)

nice i saved the green gooey stuff as well as the orange harder stuff. i wouldn't mind mixing it somehow with another dish. any recommendations? even spreading on crackers (eww)?

I eat the gooey stuff, so good.
But if you save it, you can try to use it in a vermicelli clear stir fry or something oily...

Some people like to eat the goo on its own.
Some like to mix it with rice.

slowtyper you are correct. The orange stuff is the egg. Btw, the green stuff is the tamale (or liver) and is considered a delicacy. I love them both, delish!
