Whatever shop you take it to will provide the proper oil when they do the oil change for you.
If you read the owners manual it will detail what oil spec your car requires.

No, you can use any API-certified oil. With a GM car, I'd use the OEM Dexcool coolant, though. I've heard of problems if you mix the Dexcool with the green stuff.
Oil Certification and Standards
Look for products that carry the American Petroleum Institute (API) Quality Marks. They will bear the API Service Symbol "Donut" which indicates that the oil product meets specified quality requirements.
The "Donut" is divided into 3 parts:
The top half describes the oil's performance level
The center identifies the oil's viscosity
The bottom half tells whether the oil has demonstrated energy-conserving properties in a standard test in comparison to a reference oil.

There's nothing special about it. You can use any approved motor oil.

The type of Oil weight is usually listed on the Oil Cover under the hood (or the Manual).
As long as it's the correct weight you're good to go!

As far as I know, my GM dealer does not use GM motor oil.

If you go to GM dealer, you can ask them to give you whatever brand you prefer (assuming they carry it). They do carry a few and it also depends on the dealer. Different dealer carries different thing. You can even bring in your own oil (assuming it is the right type) and they can do that for you (and you need to pay them).
What I am trying to say is, it does not matter what kind of motor oil used in GM dealer. What it matters is what TYPE of motor oil your Malibu needs.
