Always had this question. I love lamb and whenever I buy it at the supermarket to eat, I noticed that it always has the same texture (grainy) and taste. However when I order roast lamb at greek restaurants, it is totally different. Texture is flaky. What part of the lamb are the roast lambs at greek restaurant? Ive bought so many different parts of the lamb in the supermarket but have yet to find the ones they use in the restaurants

They serve that cheap part of the lamb. Which is almost steak like...
Its only good when roasted b/c its kinda tough otherwise.
It's not like those racks of lamb that just seem to melt off the bone :D

Grainy texture? I've never had that experience. I buy the shoulder chops for grilling and the shanks and the leg, that I get sliced, for slow cooking in wine.
Do you wash your lamb before marinating/cooking?
What grocery store do you get your lamb from?
