you mean like those that have a personal attendant who follows you around and puts the food on your plate for you? that'd be sweet

You probably already know about Mandarin and Star Wok.
There's a new-ish one called Woo's Buffet (by the son of the person who opened Star Wok) at Yonge & Dundas. I went there once around its opening and it wasn't that great, although the sushi selection was far better than Mandarin/Star Wok and truly unlimited (you don't have to wait for the attendants to restock in a deliberately slow manner). It may have improved by now though. :)
There are also Indian buffets like Kama and Aroma on King St.

OP, please suggest the non-self (a.k.a. "we serve") serve buffet in Toronto.

Maybe by non-self-serve they mean AYCE Sushi places where you order as much as you want and they bring it to you? There are also Chinese food places like this on Spadina where it is called a "buffet" but it just means you can order as much food as you want for a set price.

That's my guess on what the OP intended it to mean, though buffet does generally mean something that is "self-served".
