I make chili a few times a month, but wondering if anyone has a homemade chili recipe that they love. Sometimes when other people give their ideas, it makes you think "that would be great - I should try it!"
Just wondering what you add to chili when you're making it at home?

I use turkey, trinity, red beans, spices, dice tomato and paste and my secret ingredient.......avocado at the end.

Here's mine. I don't fool around with my chili. It's meaty and spicy:
-Diced fresh tomatoes (but most of the time I get lazy and get canned).
-Tomato paste
-Ground beef
-more beef: cubed, marinated, seered (still very rare when added to the chili)
-variety of beans (I just get the mixed canned)
-variety of chilis like (jalapeno, habenero (if I can find them), cayenne, Asian dried chiles<-- don't know what they are called, Asian chili in oil <-- again dont remember the name, chili powder, chipotle powder, cumin). They key is not to load it with a ton of chilis, but to get a little of each. I like it hot enough that you work up a good sweat, but you can still taste the other ingredients.
-garlic (lots of it)
-chopped onions
-bell peppers
-olive oil
-oregano
-bay leaves
-ground pepper
-not so secret ingredient: Corona Beer
-and let it cook for at least 6 hours. Then garnish with more chopped onions (adds a little crunch). I think this is called Cincinnati style. I like it, but others might not.

sounds amazing!! 6 hrs though? I could never wait that long smelling something so good cooking in the house. I've probably gone 3hrs max. I think I'll try that next time. Would have to put on a couple movies on to distract me though.

I love my version:
2 Cans tomatoes
Lean ground beef
Chili powder
Dehydrated onions
Fresh dice onions
Lots of fresh minced garlic
green pepper
Hot peppers (like the little asian red or green ones)
little basil
Lots of Black pepper
Salt to taste
little bit of ketchup
White Kidney or Navy beans
Simmer for a couple of hours, add beans last 20 mins of cooking time. The tomatoes should thicken the pot, but it should be a little runny. Serve with a dollop of sour cream, cilantro leaves & hot sauce if required.

my version calls for canned tomatoes, beans and whatnot.
the difference is I let everything stew for an hour or so. then I use another burner and flash grill steaks. they should be blue rare or rare. I let them sit for a few minutes, then slice them into chunks and throw it into my chili. There they cook for another 10-15 minutes or so. Take off heat. Serve with sour cream, cheese & bread.
When I serve it, my steak in my chili is often medium well. :)

chili without beans is still a chili?
Is there an effective way to get rid of gas from beans ...
