Any advice out there on Cuban resorts? Which are family friendly. We want to explore nature, snorkel, bike etc. Food and drink are not that important. Any advice on the part of Cuba we should try? or am I looking in the wrong part of the world?

I have been to Cuba a few times, but I have no reccommendations since the resorts I have been to are probably a little older now (they were awesome back then) but all I really wanted to say is whatever you do - do not go with anything less than a 4 star.
Although you say now, food and drink is not that important - after one week I think you will change your mind esp if you are eating the same thing day in and day out!!

If you want to 'explore', go to Varadero as its close to Havana so you can always take a day and go see the city.

I would suggest trying Holguin...it's not as "touristy" as Varadero, but very safe. I've stayed at the Blau Costa Verde and was able to snorkel right off the beach. There's the dolphin show nearby along with a zoo and a short ride to the market in Guardalarvarca. We rented scooters when staying at another resort (adults only) in Holguin and really enjoyed seeing the countryside.
