When I start my computer the ASUS logo covers up the POST data. I pressed TAB to look at it today, and noticed that it was reporting my RAM as single channel. It is installed in the correct slots... why would it be reported like this?

are you 100% sure it is in the correct slots?
Have you used other software to test/confirm/refute what the BIOS is stating?

Check out the Memory tab in CPU-Z. There's a value called "Channels #" which should display Single or Dual...or even Triple if you're on Core i7.

Yeah, Just double-check and make sure one is in the 'yellow' and the other is in 'black' ...

Issue resolved. I had misinterpreted the motherboard manual. It now reports dual channel.

They were staggered. Yellow, Yellow, Black Black.

I had one 1gb in first yellow, one in first black.

Now I put both in yellow, and it works. Weird eh? I thought dual channel meant staggered...

For most if not all Intel boards, the slots do alternate so you would put RAM in slots 1 and 3 or 2 and 4 for dual channel mode. For AMD boards though (with a few of exceptions of course), the configuration of the memory slots generally requires the memory to be in two adjacent slots.

The easiest way to tell where you should put the modules is the colour of the slots. They're colour coordinated so that you would put two modules in the same coloured slots in order to have them in a dual channel configuration.
