I have two Global knives and one of them has been used a lot and I think it's becoming a bit dull. Just wondering where I can get a cheap whetstone to sharpen it and also does it matter what the grit number is?

i just took peak at it.. so complex.. like a novel. all i need is just a guide as to which whetstone to use and where i can buy a decent one basically.

here's a site i found.. but they have three different roughness whetstones. the thing is.. i'm just re-sharpening.. so do i really need all 3.. seems a bit much.

To properly sharpen good knives, yes you do. Since you've already spent the money on good Globals think of it as part of the investment. If you don't want to invest further most restaurant supply houses also do professional knife sharpening. Our local only charges $4/knife.

Yah. I have a Santoku Wusthof that's getting dull too. I've been reluctant to sharpen them myself also ... the whole issue about getting the right angle and all.
While we're on the subject, any one have a good sharpener to recommend in the Markham/Scarborough area?

i still kinda prefer to sharpen it myself.. anybody know much about whetstones and which type i should get just for resharpening only.. there might be a few chips as well
