why does it say the drives are 5400-7200rpm? Is it that one drive is 5400 and another is 7200? or does it vary the rpms?

It varies RPM.

the drives are 'tuned' in the factory, and run somewhere inbetween to stay within specs.
most drives right now are running in the lower end of that spectrum.
