I know a few guys that took poli sci at York, all with different intentions/goals.
1. He finished York's poli sci because of personal interest, career goal was to go to law school. He got accepted into Harvard Law and is currently there as of Sept 07.
2. Wanted to be a teacher, interesting major easy to get the marks needed for teacher's college.
3. Went to do a master's in poli sci after his undergrad at York.
The rest, i really don't know what's out there. With poli sci though, it's a sure bet that you will need additional education (something specialized) if you want to have any sort of value add that an employer is willing to pay a salary for.

I'm a first year Poli Sci student at york.
I got drunk with my TA and asked him the same question. "Yes politics is interesting and incredibly important, but WTF will I do with a degree in politics? If take a business degree and Wikipedia the majority of important political figures and keep up with current events, won't I be better off?" I don't really have an answer for you, but I would say Poli Sci students tend to come out with strong communication and critical thinking skills. You're going to have to talk/charm your way into jobs over more qualified people, and then learn quickly. ha.
