What is my best bet? Pacific Mall?

Want to hold in my hands FX07, FX30, FX50 etc before purchase.
Futureshop carries 07, but none of the other ones.
Best buy doesnt have anything, neither does staples or blacks.

I've seen some of the ADEN camera stores in downtown near the Eaton centre carry the Lumix camera's.

If you want to physically hold the cameras in your hand, then you should try Henry's as they tend to have a very wide selection of cameras in store and their staff would also likely be able to answer any questions you may have.

When you decide to buy the camera, I'd suggest you check out Circuit City in the US. Make the drive to Buffalo - it is definitely worth it.

For example, the Panasonic FX50 is selling at Henry's for CDN$500 right now, but the exact same camera is US$250 at Circuit City. Even when you calculate the exchange rate and the cross border taxes and duties (if you choose to pay them), you still come out way ahead.

I'm looking for the DMCFX100 but it seems only Vistek carries it. Panasonic seems to sell different models to retailers. Everyone carries something different.
