I was trying to break apart 2 pieces of frozen chicken and decided to bang them off of my laminate counter. Well I create a hole about 2 inches in diameter in the laminate. I currently have a large cutting board covering it. Lucky for me it was beside the stove. I cannot find matching laminate to replace the section that was damaged. I was thinking about routing out an area and getting some granite or something to use as a cutting board. Any suggestions? Any ideas would appreciated.

Whatever you do, make sure that it is very waterproof because that particle board that the laminate is glued on will suck up water and then the counter is finished. As for routing it out and inserting some stone or something, I don't think the counter top is very thick, 3/4 inch maybe, so you have to be careful or else you can pop right through.
