Whats that beef called?
-You can find it thinly sliced and put into pho bowls half cooked.
-Its also stir fried with onions to be put into Philly cheese steak sandwhiches.
-Its also served thinly sliced @ korean BBQs.
-It has a very tender texture that is thinly lined with fat.
What is the exact name of this cut of beef?
Last time i tried buying it @ the supermarket.... Ibought a pack that had thinly sliced meat but it was extremely lean, and chewy.

Beef tenderloin is probably what you want.

Tenderloin is too lean. Real philly steak sandwhiches are made from rib eye steaks or sirloin. In Pho I don't think they use high quality steak .. most likely brisket.

You can buy them at T&T or anywhere.
They are thin slices for chinese hot-pot. But instead Krn BBQ uses the samething.
It's the same one as the packet ones, but instead ask the meat cutter to give you the samething but fresh.
The frozen ones are chewy and not fresh.

It's fatty, beefy and can be sliced thin to use for Korean BBQ and Pho.
The stuff for pho is sliced frozen RIBEYE.
The stuff they use in Korean BBQ is either sliced SHORT RIB or RIBEYE.

Yes it's definately ribeye. It's the same cut of meat used in philly steaks, hot pot, pho, and the beef meat at AYCE kbbq restaurants.

I think thats what they use to make the soup. Then they throw in slices of Ribeye.
