An entire generation has been brought up to think that vegetable oils are not that bad for you. That saturated fats are bad for you and are to be avoided. That they are better for you than animal and tropical fats.

Now we're finding out that that's not really the case, and that those farmers and those grandma methods were actually pretty good for you.

We tried to mess with nature by trying to increase the stability of vegetable oils through hydrogenation. That turned out badly.

Why? Probably because the industrial food companies didn't want to hurt their profits when the price increases for tropical and animal fats came along.

Now we're discovering the truth. We have some unlearning to do.
