I am not going to be a full-time student this school year, but i was in the last year. I did not take summer school either. So when does my 6 months "grace" period start? When i ended in may or the starting of september?

When you ended in may. Expect the payments to commence Nov.1

do they deduct money from your bank account every month automatically? or is there extra paperwork you have to do (e.g., choosing the term? etc...)

they start charging interest in may, but you do not have to make any of the payments until 6 months after may

They will send you forms regarding the terms of repayment, and you can choose how much is paid monthly.
