Just wondering what Canada Post does with all the undelivered/unclaimed packages?
Do you they have an annual sale to get rid of them?

I know that in some cases they sell the stuff to a resale place. I don't know where one of these would be located though.

Give em away to marketers who sell timeshares.
"Do you want the boat...or what's in this box?!"
"We want the b--"
"Wait wait Lois, a boats a boat...but who know's whats in that box?!"

After sitting at the local postal outlet for 15 business days, any unclaimed package gets returned to the sender. I don't much like doing it when it's my turn to cull out the old parcels, since I don't like having to disappoint people when they finally do come in to claim their package, but the storage area at my outlet is ridiculously small.
A postal auction would be a lot more fun though. Bidding on the mystery box for the win!

On a related note, how about couriers/carriers like UPS, FedEx and such? Do they all return undelivered goods, or do they auction them off somewhere?

They are sent to the Island of Misfit Toys.
