When ever a program that goes full screen (no longer a window with the title bar) my PC will freeze after 5min in that state. This is a major problem when I'm trying to have fun and play some games.
System specs:
AMD XP 2100 1.89GHz
512 DDR Ram
80gig x 2 HD
AIT AIW 9000 Graphic card
One possible problem is the RAM. According to my status bar I only have 108/510mb free. Is that a major problem? Will overclocking help?

I'd check for CPU temp first. Run some CPU intensive program to load the CPU up and monitor the temperatures. Some of the XP 2100+ CPU's ran extremely hot.
Having not enough ram shouldn't freeze a game. Cause a stall..yes...but not freeze completely.

Maybe your graphic card is overheating

Got the peak results:
Case:

HD:
38C
CPU:
55C
Graphic:
27C
The only thing off is the Core Voltage at +1.79v. Is anything wrong?

Went all out and cranked all fans to 5000rpm+. Noise as hell, but cool. Works perfectly! Thanks.

I'd check if all the heatsink are properly secured and perhaps wipe the pad/compound and apply articsilver on them
Fo your graphic card have an fan? Check if it's working properly
