View Full Version : stir fried rice noodles

What is the traditional way of stir frying rice noodles? I've been doing it with a mix of dark soya sauce, regular soya sauce, and a touch of sugar, but my noodles have turned out usually darker than the ones that I have outside. The outside stuff is usually a much lighter/golden brown tone compared to my dark brown noodles.
My stuff looks like this (don't mind the hotdogs, I was in a rush that day):

Is soya sauce supposed to be the classic seasoning? Am I supposed to use something like oyster sauce? Or am I just using too much dark soya sauce? Anyone care to share their sauce mixes for stir fried rice noodles?

first you need a smoking hot iron wok, then you need a good amount of oil, then mix the hell out of it for no longer than a minute when you throw it in to get that level soy sauce brown look to it.
:arrowu: thats what i see when the cooks make it at my local restaurant. takes them about 50 seconds make it.
mine on the other hand, turns out just like yours when i try to cook it at home... must be the oil... need more oil :lol:

must be that "wok hay", haha... I'd rather keep the oil to a minimum, hell, I'd rather cook it as is cuz the noodles are oily enough without me adding anything ot the wok.

It's dark because you're using dark soy sauce that really does blacken things. You could try mixing chicken broth with soy sauce and oyster sauce and it'll definitely come out lighter and possibly more yummy. Ummm and maybe you could use colorful vegetables to spruce it up =). Hope that helps.

It looks pretty good except for the hot dog. But I don't see any veg.
I like my rice noodles with black bean sauce, green pepper, onion and mushrooms.

too much dark soy. Replace with some light soy and some oyster sauce. Or if that's too salty, use some water to thin out the dark soy.

Jerk sauce with noodles or fried rice is good.
or XO sauce. Both are hot and spicy.

I don't think you're suppose to use the dark soy sauce. (e.g Pearl River Bridge Mushroom soy sauce.) They turn "sour" the moment when you apply heat to it and it screws up your flavor. The trick is to use low salt light soy sauce to colour as you please and then season with salt and sugar to suit your taste.
Generally, you can add as much light soy as you wish without it being overtly salty. And yes, hotter your wok with more "wok hay" the better.
