You've probably ask your better-side to play and 99% of the time it's "NO!" :)
Well... after trying the following...
Halo2 = "too dizzying! controls are too confusing!"
PGR2/Rallisport2 = "too hard!"
Ikaruga = "too hard!"
...
...
...
at last we've found it!
Baldur's Gate Dark Allegiance 2 = "hey this is fun!"
we played co-op for around 2hrs and I was surprised it was quite fun as well! Also showed her 'true' side as she chose the Necromancer = Evil :)
I gotta go find a bargain bin copy of Baldur's Gate Dark Allegiance 1 now... oh... we restarted 5 times before she got the hang of it... LoL!

Any version of Mario Kart is a good bet.
Also Burnout 3. Basically lighter, sillier, simpler games. Nothing too complicated or violent.

Get a DS, most of the DS games are playable for the non videogaming crowd.
A big hit also are stuff like the Eyetoy and esp Karaoke Revolution.

Mario Party can be cool until the tables get violently turned against you in the game.. the AI is WAY too random

Oh Wario Ware is another popular one. Very fun game for boys/girls of all ages. There's also Mario Party, though I don't really like the board game format (makes it super slow .. i still haven't figured out how it works yet).

Animal crossing (GC)
Harvest Moon (GC) but my wife ended hating this game because she was trying to do everything and wasn't even enjoying the game anymore. Character would wake up and she was then super busy seeding/watering/harvesting her stuff all day long until it was 4am!

Mario Kart, Mario Golf, Mario Baseball, and Mario Strikers are all kid-friendly games for the GC that happen to be very, very good. Yes, Ikky is a very tough game - a game for gamers, if you will. Zelda: Windwaker is not bad (don't like it myself, but the wife convinced me to keep it for my son's sake ;) ) and fairly cheap at the moment as well. I'm a big fan of the retro compliations available for the GC, including Namco's 50th Anniversary Museum and Midway Arcade Treasures 1. Nothing beats Pole Position or Galaga 88!

Bump
So any new installments I might have missed?
She just ripped through cakemania, both difficulties and loved it, enjoyed cooking mama, she's currently training Nintendogs, ripped through zookeeper. Only bummer is that she's not so hot at platformers and normally gets frustrated and quits 40% in =/
So anything on the DS? lol
She never had the patience to meet everyone in Animal Cross to advance the game, we're talking about minimal patience but fun game play...oy.
She's played her fair share of mario kart and tetris.

If you're into Baldur's Gate you should really enjoy the "Champions of Norrath" games.
Similar but better gameplay and graphics, and up to 4 player cooperative.

Meteos: Disney Magic is....success, we'll see how long this game lasts her. :| God I find some women extremely insane at puzzlers and I'm at the point where she is just damn better than me at those games . We're still unsure of why certain things happen in that game but meh, it's all gravy now.
