"one man" logo = cheap crap
if you want "quality + reasonable price" kitchen knives
Forschner or Wenger will be your best bet.
Both made in Switzerland, both use Swedish Sandvik steel
I picked up a set of one-man (made in spain) henckels knives from costco. They are way better than the cheap knives we had in the past. yes, they will cut your chicken and watermelon just fine. LOL
That being said, it's still a good product and way better than Faberware or any other crap.
However, I would never buy a ''knife set'' since the normal family doesn't need half of what's included.
A good Chef's knife, a good paring knife and a steel is what home cooks will use 95% of the time. I'd advocate getting a Victorinox Forschner (with the Fibrox handle) on eBay for those who don't want to spend big bucks but want quality.
not because of build quality ('cause they're awesome) but because they're too sharp and i'm not used to that
i'll wager 1/10 aghast posters here can actually tell the difference between 1 man and 2 man if you covered up the logos
for most it's the stigma of made in china, which is a legit concern for maybe 1 in 230948230498320948 knives
Their less expensive Classic series is also quite good and it made with German steel, although actually manufactured in China.
I love them because they are very well weighted and aren't that cheap light junk that seems to populate the market these days.
seriously i don't get the idea behind the "made in China" mentality. "you get what you pay for" applies to almost everything in our daily life, you can't always expect to have both sides of things. i'm sometime "skeptical" as well, but i'm happy with my HK internationals set(bought it for $20 years ago), like you i don't use them often because they are too sharp, but i'm happy with it whenever i use them.
The only thing I would add is that everyone needs to do their due diligence. Most knives sets have been on the market long enough (as they don't switch and bring out new models too often) that you can find a handful of reviews (of course as always, many user reviews need to be taken with a grain of salt, but where there is smoke, there is usually fire) to make a more knowledgeable decision.

Truly amazing knives! Was able to carve & skin the whole chicken (through bones) quite easily and still extremely sharp.
